Giancarlo Perbellini, top chef in Verona

The gastronomical tradition of Verona is filled with typical dishes and raw materials of high quality: products ranging from Vialone Nano rice, red radicchio, salami, white asparagus, chestnuts, browns and many DOCG wine labels, the pride of Veneto.

To taste the Veronese specialties we suggest to rely yourselves on a top chef such as Giancarlo Perbellini, which manages 4 restaurants in Verona and province and has received many awards for his creative talent.

His most popular restaurant is in Isola Rizza, a few kilometers from Verona, awarded with two Michelin stars, the ideal venue where to sample dishes that combine ingredients typical of the area with original and tasty variations: for example, the creamy chickpea spaghetti with shellfish soup, the sole “alla mugnaia” with chard, the braised veal with foie gras over mashed potatoes and fried leeks.

If you're planning a trip to Verona in the next months we note that at the end of October the restaurant at Isola Rizza will close and will be moved to Verona in Piazza San Zeno, the new name of the restaurant will be Casa Perbellini and will be the new dwelling for gourmets.

The restaurant, located in the historic center, will have only 8 tables and alongside to the classic menu will offer the “estratto”, a selection of 4 dishes and 2 matching wines recommended to anyone who wants to find out the best of Perbellini cuisine.

The other addresses where you can enjoy the menus designed by this artists of gastronomy are the Locanda 4 cuochi at via Alberto Mario, Tapasotto at the galleria Pellicciai and Al Capitan della Cittadella at Piazza Cittadella.

Perbellini doesn't define himself as a chef, but is the heir to a dynasty of Veronese pastry chefs. He began making apprenticeship in Italy and abroad and then showed his unique creations that have earned him, among other things, awards such as "Best European seafood chef" in 1992. The latest news concerns the continuation of the family tradition, since in August he will open the pastry La Dolce Locanda at Via Catullo 12, which will become a reference point for those who want to delight palate with delicacies such as millefoglie or Ofella d'oro, a typical Veronese leavened sweet.
